Menu Plan Monday

 

The last month or two haven’t been super organized around these parts in the meal category department. For the most part it’s worked out fine…but frankly it’s driving me nuts. With swim team practices starting up again last week, I sat down last month and actually planned out two MONTHS of meal plans.

Ahhhh…the bliss.

Here’s the plan for this week and I know it’s fairly laid back ~ but Rick and I will be out of town for a few nights meaning the pressure is off me a little bit. I’ve linked to any recipes that I’ve already posted.

Monday ~ Chicken Pot Pie {make one, freeze one}

Tuesday ~ Lasagna, homemade wheat bread and salad

Wednesday ~ Leftovers

Thursday ~ kids eat @ mom & dad’s / we eat out

Friday ~ kids pizza / we eat out

Saturday ~ Hamburgers on grill with raw veggies

Sunday ~ Monkey bread {breakfast} / Popcorn & smoothies {dinner}

Additional: Make double batch of homemade granola bars for kids and to take on trip.

  1. Oooh, we love chicken pot pie!

    We are having extended family here this week so lots of fun food! Brisket tonight and we'll be grilling out in the mountains tomorrow, along with a taco bar later in the week.

I decided I needed to get off the self-sabotage track---when it comes to everything in my life---and put myself back on a schedule, beginning today (yes, "check e-mail and read blogs" is what I'm supposed to be doing right now). That included setting my meal plan for the week. When I've been most successful with losing weight, it's been when I've taken the time over the weekend to plan out my meals for the week. It also helps me save money---if I know what I'm having for each meal of the day (made from standing at the fridge and planning around what I already have on hand), I don't buy things at the store I don't need/won't use before they go bad. So dinners for me this week are:

    Monday--Sauteed chicken and vegetables (from the Pleasures of Cooking for One cookbook)

    Tuesday--Blue cheese stuffed hamburger patty with mashed cauliflower

    Wednesday--Roasted Pork (Boston butt) in the Crock-Pot with steamed asparagus

    Thursday--Leftover pork roast with creamed spinach (with the leftover creamed spinach going into an omelet the next morning)

    Friday--Chicken fried rice (made with brown rice, of course!)

    Saturday--Steak and cream-cheese-stuffed jalapenos

    (Can you tell I'm low-carbing it?)

  3. yay That happens to me too! Where I do really great than everything falls apart! I posted my meal plan for this week as well! Looking forward to some lasagna ;-)
